I think you are partially right. Sure they want to make as much as they can, what business doesn't. But it's also about handling the demand. Our community (and perhaps others) gives a lot of positive reviews of this place. In the location, there are really no options that compete with EG that I am aware of. By doing the rushing/shortages she is serving more people also, thus, allowing more people to get a session which if she turns people down that hurts business too. It's a balancing act. I am not at all for shorting, and I agree, an hour should be an hour, but at the same time I am sure it must be hard to juggle the schedule with the volume that obviously walks through those 2 doors.
