Got to laugh, My wife, and a friend went to a Chinese noodle place on Race Street. While waiting for a table, my wife ask an Asian guy what kind of soup he was eating. He said beef tendon soup. She said that it looked good.
I said did you really hear what he said. We laughed our asses off.
Yeah, I don’t get it either! Eating those parts of an animal come from a time when there were fewer resources, and waste was not an option. The WHOLE animal needed to be utilized. I eat and enjoy the Vietnamese PHO, but specifically ask that mine contain only real BEEF cuts, and not the tripe, tendons, or any other parts that I would throw out when cleaning the animal. No hearts, tongues, liver , gizzards etc for me! But I do eat scrapple, and thatbhas all that stuff in it, so go figure!

I like the little one table places with home cooked Korean food. It's very hard to get kimche on the side at the usual Chinatown places. Besides tasting great, most dishes have specific health benefits.
