My favorite's still The Shining...HERE'S JOHNNY.
If you look at the totality of Nicholson's work, his signature characteristic is his anger. Even when he's calm, you get the feeling he is on the edge of exploding. My wife can't stand him as he terrifies her. The problem I had with his acting in The Shining is that it was too over the top even for him.
I posted my favorites scene of his (from Easy Rider) earlier. Here are my other favorite scenes of his:

Wish he had a better fate in Cuckoo's Nest. That's one's a classic. Loved it when The Chief busts out at the end!
Between the juicyfruit scene, the basketball scene and the ending The Chief may be my favorite movie character of all time.

Years ago while stuck at a job I hated, I used to have a recurring dream where I would throw the water fountain through the window and take off never to return. Unfortunately my actual departure was much less dramatic.

I rewatched "The Enforcer" the other day. The massage parlor scene is quite the blast from the past. I guess no AMPs back then (or very few).

I actually liked Zoolander. It's a brilliant movie masquerading as a dumb comedy. Liked Will Ferrell's character a lot. The sequel, not so much. Kingpin was good too. Lots of good scenes and the one where he drinks the "milk" always gives me a chuckle. Galaxyquest is another dumb movie that grows on you.

He had a minor, but good role in "True Romance", which is a very underrated movie. Another good movie you never hear mentioned anymore is "Things to do in Denver when you're Dead". Lastly "American Psycho". I still can't figure out if he did it or if its all in his head.
I was talking about True Romance to some girl few weeks ago. Brad Pitt got a small role in there also. That scene where Dennis Hopper is telling Christipher Walken about Sicily & Africa while distasteful in a sense. For their characters and scene was very well done. American Psycho was good too.

Back then Patricia Arquette couldve def got it.

If you have time for a multi season binge , Versailles was pretty good on Netflix . A more guttural version of The Crown since it was about a time long ago
