I've mentioned this before but about 4 or 5 years ago Lisa gave an incredible menu way below cost. On some days Mongers were circling her shop like planes waiting to land a LaGuardia.

Eventually, either through sheer survival instinct or because she had some finance bro as a guest, she dramatically raised prices post COVID.

She has a customer base that pays her premium for her specific brand of service. (She also has a simp army that show her these reviews and comes on to this board to defend her reputation, be forewarned.) So she is doing something correctly.

Lisa is definitely an anomaly in the ocean of C-town options but she is making it work.
