With our personal tech now acting as tracking devices, how do you guys still do it?

The most important piece of any solution is that it is easy to use. While a tech-savvy person will be comfortable using location spoofing apps. Most people are not that savvy and are not super precise with their behaviors. I already see the user error followed by the question from the kids: Why did Dad's location jump from Brooklyn, NY to Brooklyn, TX?

Stick with the toolbox in the trunk or the faraday bag

Simply run your battery down before adventuring. No power no gps no cell tracking.

Lots of apps can eat power pretty quickly. Just plan ahead.

The Faraday bags I’ve had worked barely passably for EZPass tags but they didn’t work for cell phones consistently and neither did small metal boxes (regardless of creating a theoretical area of eqipotential /null energy). Don’t trust without testing.

Keep a damaged charging cord in your car jic you need to demonstrate additional technical difficulties

I don’t have a significant other, but I do have a secretary who essentially tries to manage my life and is very good at it. I had to develop a reputation for leaving my device places even though I would never really forget it. That’s all I’m trying to add. Build a reputation as being unavailable at times because you left your phone in office, car, bedroom, etc. then you can disappear for hours. My secretary thinks I’ve run off to smoke a cigar, most of the time I’m mongering. But that’s another angle, plausible covers for being MIA 2-3 hours.

Just turn it off. Same result. Saves battery without needing to charge it back. Use the rest of the statement to explain why your battery runs down so often.
Turning it off—even in shutdown—will not work with an iPhone. If SO pings find my iPhone the phone will wake itself up, start chiming and send its current location and even its battery level to your SO. Game over.

True, that why it's still left somewhere. Mostly in my car. And with the scouting method, you will have a good excuse if she does use FindMyiPhone. If she's unhappy with how often your iPhone runs out of juice, you'll be getting a Battery Pack as a present soon. Count yourself lucky if she doesn't do a power check every morning.

A easy way to enhance Faraday bag protection may be to wrap your devices in aluminum foil, then place in bag. More layers should reduce signal leaks.

Take this last part with a grain of salt:
Salt water blocks signals too.
Find an AMP with a salt water aquarium. Ask to leave your cell phone in the aquarium. If they don’t throw you out, you have a winner lol

4 key statements guys: Metal box, in the trunk, near a restaurant, with the phone left on. The intent is to create an environment where it is tough for the phone to get a consistent signal, replicate bad cell reception and provide plausible deniability for missing time. It is a simple, future-proof solution that is easy to remember, and won't take a degree in phone-tech to execute.
