Why are some indy providers so insistent on gift cards?

I did not end up doing it because I found it shady lol. And they're particularly about Ebay or Apple gift card lol

Gift cards are easier/safer for them to receive than other forms of e-payments.

I’m unsure why there was a preference of eBay or Apple gift cards but most providers will have some gift card in mind either way.

My atf lets me pay her with gift cards to her favorite store.

Sounds like you dodged a bullet, you said that they said it was okay to give them card after session, but since you didn’t try a session one can only speculate. There were some scammers using this method to steal whatever funds were placed onto gift card. They would ask you to send a photo of the gift card receipt to prove you were serious they would get the numbers associated with the card receipt from the photo and just like that, your funds would be transferred to their account and no more response from them.
